What an absolute honour to have hosted international roasting expert, Morten Münchow for three days from 13 to 15 February 2019 for a masterclass dedicated to the science of coffee, roasting and sensory analysis!
Let's retrace the steps of this fantastic experience that involved 12 coffee experts from the Old and the New Continent.
DAY ONE: SCIENTIFIC EXPLORATION
Morten Münchow presented the most important research, doing so on behalf of CoffeeMind, the Coffee Academy he founded: «Via my research I want to provide companies with a structured education that starts from the very basics. Only by following a scientific method can we understand what the fundamental aspects are, and focus on those, without ever losing sight of the needs of the consumer. In the specialty coffee area, unlike the commercial side, it is too easy to look at coffee with a touch of arrogance».
Let’s follow Morten's advice and always remind ourselves how important it is for a company to find the right compromise and balance between creating an innovative product and its proximity to the consumer’s actual preferences.
DAY TWO: ROASTING AREA
In our brand-new lab participants focused on the development of roasting and colour, following the basic steps for proper quality control.
Objective: to reach the same level of roasting through different profiles.
DAY THREE: SENSORY EXPERIENCE
Ready, steady ... taste the roasted coffee from the day before!
«For a coffee roaster it is essential to develop their sensorial skills to the fullest - explains Münchow – so as to be more aware of what you are doing. For this reason we run a program to help roasters concentrate, first and foremost, on being able to recognise basic flavours and aromas, and then to investigate the more advanced aspects of analysis at a later stage».
