The Brewing Intermediate course lasts two days: this course explores in depth the technique of brewing and introduces the concept of scientific evaluation of coffee extraction through the control of the right parameters to improve quality in the cup.
To do this, some experiments will be carried out, such as the splitting of the same extraction into three parts and the preparation of brews with different extraction percentages in order to understand how to adjust the parameters in search of the best cup of coffee.
All these tests are carried out using some important tools, such as refractometer and the Brew Control Chart.
We will see how the temperature affects the extraction of the coffee by going towards the analysis of the cold and hot extraction at a different temperature through the measurement of dissolved solids and the use of the Brew Control Chart.
To better understand the relevance of water in coffee, during the SCA Brewing Intermediate course, we will experiment the extraction of filter coffee with various extraction methods and using waters with a different degree of dissolved minerals, in order to perceive the organoleptic differences of the outcome drink.
Various experiments will still be carried out on the difference between paper and metal filter (and on different types of paper and textile). We will also investigate the differences between the various types of grinders and the obtained results and how this affects the final drink.
