The Intermediate level provides you with a more detailed understanding of the roasting process and the different forms of heat transfer.
During the course you will have to demonstrate your ability to recognize, record and control all the variables that occur during the roasting process.
You will learn how to measure the humidity and density of green coffee beans and how these variables affect roasting. You will know how to treat a coffee depending on these variables and the different green coffee manufacturing process.
You will learn to recognize the roasting color of the various roasting phases and you will be provided with practical and professional tools to take note of various aspects of your roasting profile, so it can be replicated.
You will be able to modify the roasting profile by trying to control some variables such as the Development Time, by controlling the heat applied to the roaster, and the Rate of Rise.
Many practical tasting tests will also be carried out using the triangulation method, for example to recognize and describe the organoleptic profiles of roasted coffees with various roasting profiles.
