This level tests the skills of the professional coffee roaster in sensory evaluation of the roasting profile, in the knowledge of coffee chemistry and the chemical / physical reactions that take place during roasting.
At the end of the SCA Roasting Professional course, the student will be able to analyze a roasting profile in detail and to configure and use a roasting control software.
During the professional level you will be able to deepen the main chemical reactions that take place during the process and the development of the flavors that derive from it.
The student who participates in the SCA Roasting Professional course will be able to deepen all the methods of heat transfer during roasting and how these forces can be modulated and controlled to replicate the profile.
Furthermore, all the main roasting defects are analyzed visually and at a sensorial level; all the methods to avoid them will be investigated.
The different parameters to be set according to the coffee you are using will also be highlighted (for example, for the coffee processing method, degree of humidity, etc.).
A part of the course is dedicated to the various chemical reactions that occur during roasting such as the degradation of organic acids, the formation of gases, the chemical and physical parameters that influence the solubility of roasted coffee and the chemical causes of the color change during roasting.

By passing both the theoretical and practical exam, you can gain 25 training credits useful for the Coffee Diploma of the Coffee Skills Program, plus the SCA certification.
To participate in the Roasting Professional exam, you must have passed the Roasting Intermediate level.
